Salad with Steel cut oats “Taboulé”

Tabbouleh is a Mediterranean salad of very finely chopped vegetables tossed with lime juice and olive oil.

There are many regional and even local variations of tabbouleh.

Taboulé, a familiar salad in France, is similar to North African recipes using durum wheat semolina (couscous grain) with tomatoes, lemon juice, olive oil, raisins and fresh mint leaves.

Instead of couscous grain, I use steel cut oats.

Put the steel cut oats and boiling water in a soup jar and leave to soak for about 4 hours.

Ingredients

  • 1/4 cup steel cut oats

  • 1/2 cup boiled water

  • 1 cucumber, diced

  • 1 tomato, deseeded and diced

  • 1/2 onion, finely sliced

  • 1 bunch frat-leaf parsley, chopped

  • 1 bunch coriander, chopped

  • 2 tablespoon lemon juice

  • 1 tablespoon olive oil

  • 1 teaspoon quatre épice (four spices)

  • salt & black pepper

Directions

  • Put the steel cut oats and boiling water in a soup jar and leave to soak for about 4 hours while you prepare the rest of the ingredients.
  • Put the chopped herbs in a bowl and add the tomato and onion.
  • Transfer steel cut oats to the bowl, along with lemon juice and olive oil.
  • Mix thoroughly, season and serve.
