1 cup dates
1/3 cup cashew nuts
1 cup rolled oats
1/2 cup coconut fine
1/4 cup lemon juice
Directions
- Mash and make creamy dates in a bowl.
- Add cashews nuts, oatmeal and coconut fines and stir to combine.
- Add the lemon juice and stir again for a few minutes.
- Once thoroughly mixed, transfer to a pan lined with plastic wrap or parchment paper so they lift out easily.
- Press down firmly until uniformly flattened.
- Let it sit in the fridge for about an hour until it has set.
- Remove bars from pan and chop into 8 even bars
